My understanding is that autopilot maintains the heading, altitude and level of the plane as long as it has fuel. But you won't escape the atmosphere…

You need an extremely powerful engine and a fucktonne of fuel to escape the Earth's gravitational pull, and commercial planes have neither of those things.
